5.1 to Stereo Question

As of right now I'm still running off my SC-37 receiver, but have been messing with the settings more and more lately. I noticed that there is a definite sound boost when switching from 5.1 to Stereo option when listening to music or video games. My question is, is this from the receiver being able to feed the speakers more power just because there are 2 instead of 5? Would running the front speakers off an external amp give me the same boost but being able to run them in 5.1? Haven't been able to ever mess with a system that had external amplification, so to me this is all guess work.

That AVR's 5 channel power rating is only slightly less than its 2 channel. It's so little you wouldn't hear the difference.
When switching to 2 channel the AVR kicks out of the 5.1 calibration settings, which will result in a volume level increase. You can run the program for 2 channel or 2.1, if desired.
