  • I don't sear a roast myself. I cook @ low temp until desired doneness. While the roast is resting (usually 20 minutes) heat oven to 500 degrees. But roast in for approximately 8 minutes in which time it will crust, serve immediately. Do cover roast while resting so it stays warm. Uncover of course when putting into the 500 degree oven to finish.

    NO on the searing. And I was only kidding on boiling for five minutes. I cover mine with Kosher salt. ( forms a crust when its cooked, just nock it off before slicing ) In the oven at 325 and pull it when meat thermometer reads 120. About 15 minutes a pound. Let rest for about half an hour before slicing.
