Daddy got a new smoker!

So, 'daddy' got some b-day gift checks from the family and I put it towards a new Weber Smokey Mountain 18.5" smoker.

Perfect size for the family.

    Very nice choice, I love mine. One minion method load of charcoal and it'll keep 225 degrees for 8 hours or so, as long as it's not bitter cold outside. If you're new to the smoker world or just looking for some solid recipes, check out amazingribs.com. I believe someone here mentioned the site awhile back, I've tried a few different recipes and they've all been on point.

    I've been using amazingribs.com as my 'go to' source for quite awhile now, but am new to the WSM so getting up to speed on tips and advice.

    First thing I'm going to do is the door mod with some gasket tape.

    The family is asking for burgers this weekend so I'm probably going to break down the barrel section and go for the easy setup to 'grill'.

    As far as true smokin' q....that'll probably be next weekend and I'll go for some pork butt/shoulder for pulled pork.

  • I love smoked tofu. If you're ever in a good Asian market try some. There used to be a really good restaurant in my neighborhood that had a fantastic beer selection and the owner's wife made some wild smoked food. She did some tofu Korean style and with the right beer it was excellent. Guys who would rather dance ballet in a pink tutu (anybody remember the Warner Brothers cartoon reference?) than eat tofu were munching on this stuff and loving it.
    Tofu's one of those foods that take on whatever flavors are around them and gives them an edible form. Perfect for smoking.

    The neat thing about the WSM is that you can break it down to be a grill as well, so it ain't just a smoker. I'm going to try that this weekend and see what kind of sear I can get on some burgers.

    The test run last night was pretty impressive - I dialed it in to 225F and it held that for about 4 hrs on a very small load of charcoal. Fully loaded using the 'minion' method is supposed to last 8+hrs w/o having to add fuel.

    Tofu Ken ? While I know Tofu picks up the surrounding flavors, tofu itself is one effed-up food. If it tastes like nothing on it's own, why put it in there then ?

    You fill the ring with charcoal, but then 'dig out' the center section and put those into the charcoal chimney for starting - once hot you return the lit coals to the center and then the fire spreads slowly outwards for a much longer burn. Works esp well for low and slow.

  • In Japan your favorite neighborhood tofu maker is as valued as the master sake brewer. There they have hundreds of different flavors and textures and can be steamed, coated and deep fried, stir fried in a wok and smoked. We only get to experience a small sample of what can be done with it. Deep fried silken tofu is downright heaven on a chopstick.

    They are great to have, I love mine even though mine has an electric heat source.
    Set and forget, wait 5-6 hours and you are handsomely rewarded.

    I am partial to ribs these days, sometimes I will cut the racks into 3rds just so I can try different rub combinations. I have a good rub recipe but honestly I've found the Grill Mates from McCormick to be very good, there are several varieties and that's half the fun trying out new flavours. Then there's the wood chips... Almost as much of a fun hobby as audio.
    So, are you willing to put forth a little effort or are you happy sitting in your skeptical poo pile?

    I love my Weber Smoker, I prefer to use sand most of the time instead of water, as the water can make it hard to form a good bark, but with chicken and Turkey I swear you can squeeze the liquid out of them as their so moist. I cut out the backbone then split them in half and put 2 halves per shelf for the chicken that marinated for 4-8 hours and its perfect!

    You know... I can't contemplate tofu for anything ...the texture is like rotted pudding. They should make a breakfast cereal out of it. It would be better than anything from a nutrition aspect. If they could make it crunchy and taste like sausage or bacon there would be no heart disease in America...

    I love me some quality tofu! Short Ribs, authentic Kim Chi, home grown hot peppers and bottomless beers..

    Side note. I grill several times a week, regardless of weather. I need to get into the Smoking game!

    Every Thanksgiving I smoke a small Turkey and the wife bakes one in the traditional fashion in the oven, the smoked bird is ALWAYS the first to go.

    Nice looking cooker Erik, congrats. We've seen your previous excellent meals many times. Give us a quick review after you've used it a few times. I like the compact vertical design, takes up less space to store it. It looks like it's comparable to the old Brinkmann Water Smoker.

    My wife purchase the Big Green Egg smoker for me this past Father's Day and have been enjoying it ever since. Smoked meats are the best and slow cooking ribs that fall off the bone, perfection!
