Creating demo clips from full Blu-Rays

Can anyone suggest software that will allow me to snip scenes or chapters from a Blu-Ray and then merge several of those clips into a single mkv file?
I am trying to create a demo for my HT for tomorrow's Central Iowa Home Theater crawl and would like to just keep the same file for all 3 groups coming through vs swapping from movie to movie for my demo...
