There seem to be a lot of new extensions around, .restaurant for example, there are more on here http://www.1and1.com/domain-names
My question is, when choosing a domain name is there much difference in the extensions? Say my first choice of name was taken with .com but was available with one of the lesser known extensions, would that be better than having to add numbers/hyphens/underscores etc and have .com? I kind of think that the ones that are easy to spell and remember are better, whatever the extension.

It's personal choice. They are all still top level domains.
It can be easier to differentiate yourself with them, though.
Like, say you wanted to open a sports bar catering to NASCAR fans and you wanted to call it The Pit Stop.
But a repair shop 3 towns over has the same name and already owns thepitstop.com.
Since you're gonna open a bar, you can get thepitstop.restaurant or whatever. It's immediately differentiated and everyone knows if they want The Pit Stop sports bar in East Jabip, Nebraska, they go to the .restaurant address that pops up in the Google search results.
They could also be used to differentiate between the same restaurant names in two different countries or states.Expert Moron Extraordinaire
