Check out this link. Had some of this guys smoked ham over last weekend and it was da bomb. Taste similar to a lightly smoked prosciutto. The taste just keeps going in your mouth the longer you chew. Cut it up thin like you would a prosciutto or wrap it around some mozzarella and throw it on the grill.

Just enough smoke too, as you know some can over do the smoke to a point where it's overbearing. This dude does it perfect and delivered to your door for a reasonable price. Give him a try, you won't be disappointed.

    We really need to have a meal together! I missed my chance of being out your way; although my entire family is in Chicago as of yesterday. I had to stay back home to finish my Physical Therapy on a tennis elbow-like injury. I believe my right elbow may also be a little arthritic at this point. To many years of "bad form" in the gym? lol Older bodies just don't heal like they used to, Tony!

    I need to find out if my local butcher can get me pork bellies so I can make my own bacon.

    It'd be awesome to get a ham to cure and smoke too.

    Oh stop cryin'...lol. Believe me, I know arthritis that comes from years of abusing your body and old age. Hey, be glad to take your family out to dinner minus you, that way I can talk crap about you. Seriously, would love to meet the clan. Give me a heads up next time your out this way so we can make a plan of attack.

    Semi-cold smoke a monster filet for about an hour and then immediately onto the grill at ~600* for 3-4 minutes per side.
    Serve it with some oven roasted asparagus wrapped in smoked prosciutto...the oven roasting crisps up the prosciutto really nicely.
    And a nice smoked porter to chase it all down...

    This is too funny! I just got back from my first PT appt. for my tennis elbow-like injury. I got a cortisone shot last week, now I'm looking at a few weeks of PT. But the most important thing I am to do is to rest it as much as possible. So now I'm wearing my wrist splints that I usually wear at night for my carpel tunnel. He was delighted when he found out I had them and told me to wear them as much as possible.

    Now as for smoked goods, I used to do a lot of ordering from this place. Yummy stuff!

    I make my own bacon and no store bought brand even comes close to the taste and quality. I like that I can tailor the ingredients in the brine to suit my own taste.
