    Been baby sitting some "Pork Butt" I have been smoking all day, and I'm using his Memphis Dust recipe for the rub.

    Two of the butts are done & the picnic needs a little more time :)

    I'd love to try your potato salad and the beer, I have got some New Belgium 1554 Black Lager all nice and cold!

    why do they call the shoulder a picnic ham when a ham is really the thigh or leg of the pig?

    "In pre-revolutionary New England and into the Revolutionary War, some pork cuts (not those highly valued, or "high on the hog," like loin and ham) were packed into casks or barrels (also known as "butts") for storage and shipment. The way the hog shoulder was cut in the Boston area became known in other regions as "Boston Butt." This name stuck and today, Boston butt is called that almost everywhere in the US,… except in Boston.

    "Picnic ham" is a little challenging, even for the pork board folks. Generally, the shoulder is smoked, they say, which gives it a very ham-like flavor. Since picnic shoulder/ham is an inexpensive substitute for real ham (which only comes from the hind legs), they speculate that it would have been considered a good cut for casual dining — such as a picnic — rather than for use at a formal family dinner, such as Easter or Thanksgiving.

    That is cool info :) I sort of knew about the Boston butt, but the info about the picnic explains a lot!

    Sure..

    3 lbs of red potatoes boiled fork tender chopped to bite size with skins
    3 Large Eggs Hard Boiled chopped
    6-8 slice of bacon cooked crispy crumbled and drained on paper towels
    2 scallions chopped
    2 stalks of celery chopped
    Paprika
    salt (Careful bacon adds salt flavor) to your taste
    pepper fresh ground.

    Mayo ( about a cup and a half to 2 cups) I've been using Helmans canola mayo.

    Mix it all up and cover it and put in in the fridge for at least 2 hours.... keep it in the fridge and it can last up to 3 days.
