With a spare Adcom 5503 sitting around, I was wondering if there's any way to (safely) connect this 3 channel amp and make it work in stereo . . . What say you?

As always, your insight is appreciated . . .

The 5503 can be run 1, 2 or 3 channels. Just use 1 channel per speaker and you're golden.
