Can a 7.1 input convert to a 2.1 output?

I have a question for all of you preamp/home theater experts out there! I have a pair of RTA 11ts and i am starting to use them as my home theater system for Blue Ray movies. Now, i am not one who is going to convert to a true 7.1 channel system because i mainly listen to music. My question is, does anyone know of a way i might be able to take advantage of the 7.1 Dolby True HD or DTS HD Master inputs into a preamp that would have outputs into a 2.1 channel system?
I realize that the output would be a simulated surround sound but i'm okay with that. I have a HK 3490 receiver that has a DVS feature that does work well and sounds good but the amp is not powerful enough. I would like to upgrade to a more powerful amp without losing my simulated surround sound. I have an email into HK to see if i use my current receiver as a preamp, as it has preamp outputs, will i lose the DVS effects. Any thoughts?

You just set everything to stereo and it will sum the output of 7.1 into 2.0.Main Surround -
Epson 8350 Projector/ Elite Screens 120" / Pioneer Elite SC-35 / Sunfire Signature / Focal Chorus 716s / Focal Chorus CC / Polk MC80 / Polk PSW150 sub
Bedroom - Sharp Aquos 70" 650 / Pioneer SC-1222k / Polk RT-55 / Polk CS-250
Den - Rotel RSP-1068 / Threshold CAS-2 / Boston VR-M60 / BDP-05FD -
+1, My yammy 663 is able to do the same thing (sum 5.1 or 7.1 down to 2.1 and actually I think I can even get it to 2.0 if I set the mains to large and leave off the subs) on blu rays so hopefully your HK can do it too.
