I've been lucky one or twice........
Went to my sisters house Tuesday (We had TG yesterday).
Anywho, long story short, I am a decent cook, at least most people think so.
So I am over at her house (High $$ house, she has been an RN for 25 years, go figure:cheesygrin:).
She hits me up about every little thing.

325 degrees, or 350?

Does this plate look pretty?

So, there we are, cooking TG dinner for the entire family (some flew in from TX.).
So she plays the "Brine" card on me (Tuesday night).
Brine the Turkey!!........with apple cider, yadda, garlic, yadda.....yadda....some word I could not understand........... and pepper!

Just wanted to mention, my Grandmother was there (91 yrs old), and brought 2 trips to her car to unload grandma goodness!

And I must say, she is on top of her game!
You could not buy pies like that, they do not exist in the real world (I am sure you have read about them in print, that said, I have a whole pecan in my fridge!)!

I brine the turkeys that I smoke for 24 hours or so, then cook them with charcoal/hickory smoke for about 14 hours at 220. I have not ate better turkey then a brined and smoked one. Yum. Nice job tho, a brine will make a world of difference with pork and poultry. Next time your making some chicken try a quick 40 minute salt brine, you WILL notice the difference.
Oh, and, entitling a thread "I've been lucky once or twice" and then going right into talking about your sister, whew, that was scary. I know how you southern folk are!!! :cheesygrin::cheesygrin: -
