New Construction Speaker Design

We are building a new rec room and I am shopping for my speakers and audio to set it up. The room is pretty big (25x28), but only has an 8' ceiling. It's in the opposite side of the house from the baby's room and we really want to be able to crank up the music and movies and have it sound good.

Right now, the plan is for a pair of 265LS for front R/L speakers and 65LS in the rear. All of those can easily be done in-wall.

However I have one problem and one question:

1) There is a load-bearing post where the center would go and I want to mount the TV (65" LG 3D) on the wall with no cabinet underneath. But it is impossible to install an in-wall speaker there. What is the best solution for a center channel that won't look like an afterthought and will keep up with the LS's? (Doesn't have to be Polk - sound quality and appearance are paramount.)

2) I have room for side speakers for a 7.1 system, but have been told that if audio is encoded for 5.1 it will then useonly the side speakers rather than the rear speakers. Is this true?? What amps should I be looking at?
