Shot this footage , probably 20 years ago. Lexington Market in Baltimore, MD. If in the city.....make sure to stop by. Cheap "FEEDbag". Guess what food was popular. I am from Bethlehem, Pa. A staple of life was a Phillie Steak Sandwich.

    ...if you are into "PHILLIE Steak sandwiches"....get yourself a meat slicer. Buy cheap round roast and slice paper thin. Cook up some sweet onions in some Sesame oil.....add the Steak. Serve in the BEST hoagie roll you can find. Add a dash of pizza sauce and some peppers . Heaven

    ...always great ole memories sucking down a few oysters with some National Boh....and then onto a Steak sandwich or Gyro and fries. The tab back then was under $6.00. Of course salary was in line.

    BZZT! Wrong.

    Philly (see, a "y", not an "ie") cheesesteaks are made with ribeye, not round or chuck or anything else. "Cheap round roast" will get you a garbage sammich with no flavor. If you cut with the grain of the meat, round get stringy and you can't bit through it without gnawing. If you cut across the grain, round crumbles when cooked 'cause there isn't enough connective tissue to hold it together. Also, minimal fat.

    Ribeye has plenty of connective tissue to hold it together when sliced thin. It also has a favorable fat content so that the meat cooks quickly and you don't need "sesame seed oil".

    The point of a cheesesteak is to fry the meat quickly. It shouldn't take more than 8 minutes from the time the meat hits the griddle/skillet to the time it hits the roll. The only oil you should need is olive oil on the roll, a generous helping of oregano and crushed peppers if you like. Saltpepperketchup. Fried onions, doesn't have to be sweet and 3 slices of American cheese or cheezwiz. A nice Italian roll, hard on the outside soft and chewy in the middle. Yeah, I don't know what this guy up here is cookin' but it ain't a Philly cheesesteak in any respect. Probably get laughed at on the corner of 9th and Passyunk if he started talking about sesame seed oil, sweet onions and all that other silliness.

    Then again, you are spelling Philly incorrectly so I guess we should expect you get it wrong with the sammich as well.

    I must say that the clients look vastly different in present day.

    The market is a good place for a crabcake sandwich. Pi$$ on Filthadelphia and their nasty,mostly tasteless steak creations. Cheez Wiz for crying out loud?:rolleyes:(decent pizza at Cippolino's Short Stop, though)

    ./..Bye the way - Cheez Wiz is the cheese of choice in Phillie. I, myself prefer mozzarella with a splash of pizza sauce.

    Notice the line for the steak sandwich in the video. Haven't been there in awhile. Places might have changed.

    In DC my favorite sub is at Mangialardo's.....G man deluxe. Best Italian Sub in the city. Can serve 2. I use to live across the street.

    I grew up next door in Easton and spent an appropriate amount of time in Philadelphia as well. Not going to get into a spelling war here guys. But John (Jstas) also works in the city and went to school there so he's not an outsider. Besides, he's an avid Philadelphia sports fan.

    But yeah, dee1949, those are yummee. However, I've never had a quality cheese steak made with Cheez Wiz...that's a no no!

    Agreed. Provolone. That's what you want. American is a workable substitute in the event there is no more Provolone available.

    I like a good Philly, but I'll take a great Chi-Town style any day, in fact I had one last week, I'm flippin' the bird to a friend who thinks his out east are better :tongue:

    I must say that if I were to put peppers in a Cheese steak, I'd (and I have) prefer, Italian Sweet Peppers. But I know some people "like it hot".

    For purists though, hot peppers are not a common staple in the classic version.

    Though that does look good...and I do like hot food!

    We love it hot here in the desert :smile:, I buy jars of those and put'em on lots of stuff.

    ....memories and a little history of Lexington Market....for crab lovers. A piece of Baltimore History. This is where I sucked down my first oyster. Drowned it with a National Boh. After that, grew to like them and it became a ritual. Wonder how Quincy Market in Boston is doing? Another favorite place. Anybody remember, before Harbor Place was built, the ethnic festivals along the harbor. Good ole times in the early 70's.
