Alright, I'll be done about 5ish with the injected one, and about 6ish with the non injected one. Both are brined, rubbed, and will spend a total of 9 or so hours on the smoker. Smoked with a combo of charcoal, hickory, and apple wood. Mmm... Bring a side! :biggrin::biggrin:

That sounds great...I have both brisket and spareribs planned for sometime in the next 10 days. I haven't done pork shoulder in my smoker in a while. Which sauce do you use--vinegar-based I'm assuming?
I'll be thinking of those pork sholders about 6PM as I'm headed over to the neighbors' house for a end-of-school-year luau. I did Kahlua Pork (Hawaiian style, in an oven with no brining, only salt rub, cover with fresh spinach and add a little liquid smoke, ) for a smaller group about 8 months ago, and this couple liked it so much that they're doing a 40-person luau including building a 6' long tiki bar...
And yes, when I did it there was poi. The poi didn't sell as well as the pua'a kahlua, for some reason... I think the sides tonight are rice, ahi poke, and whatever other folks are bringing.Current polk speakers:

The rub's are in one of the photos, store bought, I've got plans to try and start making my own this summer, no sauce required here. The brine is simple, 3/4 cloves of garlic, tablespoon or so of peppercorns, and a cup of seasalt, warm untill dissolved, add ice, pour into bucket, let sit for 24 hours. Can't go wrong. I'm moving the take off time to about 6ish, so... Its free! I'm also doing about 20 corn, and 5 potatoe boats on the other grill, so at this point, sides aren't required! Your golden blue light! Now where did my beer go? -

Ahhh ... Rudy's Rub one of my favorite store boughts. I use it all the time here. There BBQ sauce is good too, if you like a bit of heat. If you prefer a tamer sauce with good flavor try Rudy's Sissy Sauce.
Wish I was closer I would have brought my appetite and some beer.

Scott - We've got family in the area, and I demand that they keep me stocked in the rub, but they always send the sauce too. Good sauce, but their rub and Sweet Baby Ray's is a match made in heaven. Finished product pictures! -
