First Real Surround System

Hi everybody. My GF bought me Monitor 60 series II and a PSW10 sub for Christmas. She thought we had a receiver in the basement that we could use. I figured it was a good excuse to buy a new one! So the Monitor 60's have 2 outputs on them... not sure how to wire. Also They look really odd right next to my TV. What is the best way to set up a 5.1 (1 sub) and have 2 speakers going to different room. Or do 7.2 with everything? Here is what I'm working with:

Mitsubishi 57" DLP 1080P
PS3
ONKYO HT-RC260 7.2 receiver

(2) Polk T-15 Bookshelf speakers
(2) Polk Monitor 60 series II Towers
(1) Polk CS2 Center
(1) Polk PSW10 Sub woofer
(1) Klipsch 10" down firing sub woofer

I forgot to add that the TV is in a corner and there is a bay window on the left and regular window on it's right. I was thinking of putting one tower on the left bay window and the other on the right of the regular window... would it matter since I have a center speaker if the others weren't near it? The receiver has mic setup btw..

    Buy a receiver with 7.1 and dual zones... You can just hook up the 5.1 and then 2 channels to another room.

    The INPUTS on the monitor 60s are for biamp/biwire. You won't need to worry about that. Just hook up the wire to one set of the jacks.
