Cheese Soup

Anyone got a recipe for good cheese soup?

You think being in WI that we would have this as a family hand down thing but the cows were not a part of our upbringing.

Just want something simple. Or even a nice beer and cheese. All the ones I was finding online for beer and cheese turned out like crap. We have a local place that makes a beer and cheese with a nice dark beer and is very simple (according to them) and amazingly good but they won't tell you how they make it at all....which sucks (besides its simple) ????

Wisconsin cheese soup is the best, don't have a recipe though. Maybe a cheesehead will chime in.

Here you go, from Panera Bread:
5 tablespoons butter or margarine
2 medium carrots, chopped
2 stalks celery, chopped
1/2 green bell pepper, chopped
1 medium onion, chopped
1 cup mushrooms, chopped
1/2 cup cooked ham or bacon, chopped
1/2 cup all-purpose flour
2 tablespoons cornstarch
4 cups chicken broth
4 cups milk
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon ground mustard
1 pound sharp cheddar cheese
salt and freshly ground black pepper, to taste
