So for the sake of argument, lets say I have a 1000W amp.
If I'm running 2 speakers, will this amp deliver 500W per channel? Then if running 4 speakers will it be 250W per channel? ect.. ect...

Welcome to Club Polk.
I would suggest to look up what the published specifications of the amplifier
from the Manufacturer or what may be printed in your owners manual.
Output power is basically dependent upon several factors including impedance,
distortion, input signal. -
If you give us the brand and model of the amplifier, it will help. Generally speaking, the answer is no. Same as if you have a 7 channel amp, and are only using 5 channels, the other channels don't get more power.

And here is another thing for you to ponder. A 1000w amp is just slightly louder than a 500w amp. Like Pycroft said give us the amplifier in question.Vinyl, the final frontier...

Actually Pycroft's answer gave me the information I was looking for, I'm trying to decide on a new amp and most current models are 7.1, but with the size and layout of my room, I cant see myself ever going more than 5.1.
